Mexican Buildup is an all time favorite with my three children and all of their friends. This is hamburger and rice in a mildly seasoned tomato sauce. It is served over corn chips, and topped with lettuce, tomatoes, cheese, olives, avocados, and all of the other Mexican flavors that every one loved. We double the recipe, and it gone before you know it! The entire Edina football team wants an invitation to dinner when we are having buildup!
The Potato Burrito recipe is one that evolved over the years at our house. It is one of the "comfort" foods for my three children. They love a big plate of potato burritos! They are much better than they sound!
The King Ranch Casserole is another good Mexican dish. It is also a good recipe to make ahead and freeze. Again, if your family likes Tex-Mex, this entree will be a hit.
The Stuffed Cabbage Rolls are filled with seasoned hamburger and rice and topped with tomatoes and parmesan cheese and baked.
The Deep Dish Pizza is fun for a crowd. We make dough for individual pizzas, and put all of the toppings out so that everyone can build their own pizza. This is a fun evening!
If you like Reuben Sandwiches, you will like the Reuben Loaf. It is fairly quick to put together, and uses a frozen bread stick as the bread. It is stuffed with corned beef, sauerkraut and Swiss cheese and baked. The bread rises around the stuffing.
Another good sandwich option is the Chef Salad "Sub" Sandwich. This is fast and easy and will fill a hungry crew quickly.

Chicken & Green Chilies Casserole
