Ingredients:
2 Cups sugar
1/2 Cup corn syrup
1/2 Cup water
Dash of salt
1 Teaspoon vanilla
2 Stiffly beaten egg whites
Stir sugar and next 3 ingredients until dissolved. Boil to medium heat (ball stage 240 degrees F.) Slowly pour 1/3 of mixture over 2 stiffly beaten egg whites, beating constantly. Cook the remaining syrup to very hard ball stage 265 degrees F. Beat syrup in candy mixture, continue beating. When mixture holds its shape when dropped by spoon add 1 teaspoon vanilla, add nuts if desired and drop by teaspoon onto a greased cookie sheet. Swirl each piece to a peak.
