Ingredients:
1 Leg of lamb-6 Lbs.
Salt & pepper to taste
3 Garlic cloves.
1 Tablespoon oregano
1/2 Teaspoon Thyme
Juice of one lemon
1/2 Cup olive oil
2 Cups white wine or vermouth
1/2 Cup melted butter
18 Small potatoes, peeled
Cut slits in lamb and insert garlic. Salt and pepper. Rub oregano and thyme and sprinkle with lemon juice. Mix 1 1/2 cups wine and oil and pour over and marinate for several hours. Roast lamb at 350’ F. for 1 1/2 hrs. or 2 hrs. Baste frequently with 1/2 cup wine and melted butter, adding hot water to juices as needed. An hour before roast is done add potatoes. Sprinkle with salt and pepper, baste with pan juices and turn while cooking to brown evenly.
