Ingredients:
3 Slices bacon
Thyme 1/4 to 1/2 Teaspoon
1 Diced med. onion
3 Cups cubed raw potatoes
1/2 Cup diced celery
1 1/2 Cups diced carrots
5 Cups hot water
1 1/2 Teaspoon salt
1/8 Teaspoon pepper
1 lb. Can tomatoes
1 Small can tomato juice
3 Cups clam liquid-juice
2 Doz. clams or 3 cans
Sauté diced bacon, add thyme and onions. Add potatoes, celery, water, salt, pepper & carrots. Simmer 5 minutes. Add tomatoes, clam liquid( add water to make an even 3 cups) Simmer. 1 hour before serving, add clams and parsley. Add 2 Tablespoon flour to water to thicken, if necessary.
