1 Lg. white onion, diced
1 Lg. green pepper, diced
6 Polish sausages, bite size
2 Large potatoes, diced
2 Large jars Pace picante sauce ( mild)
1 Pkg. diced cooked chicken
2 Cans chicken broth
1 Can hominy, drained
1 Can water (used to rinse out Picante jars)
Sauté onions and peppers in peanut oil until tender. Add sausage to mixture and brown. Add potatoes and brown or cook a few minutes. Add remaining ingredients and serve with buttered flour tortillas.
