Ingredients:
2 Tablespoons instant coffee granules
1 Cup butter (softened)
1/3 Sifted powdered sugar
2 Teaspoons vanilla extract
2 Cups all purpose flour
1 Cup finely chopped pecans
Sifted powdered sugar
Crush coffee granules into a fine powder, using back of a spoon: set coffee powder aside. Beat butter at medium speed until creamy; gradually add 1/3 cup powdered sugar, beating well. Add coffee powder, vanilla, flour, and pecans, mixing until blended. Cover and chill at least one hour. Shape the dough into 1 inch balls; place on un-greased cookie sheets. Bake at 350 degrees for 12 minutes or until lightly browned. Transfer to wire racks and cool 10 minutes. Roll in powdered sugar; then cool completely on wire racks. Roll in powdered sugar again if desired. Yield: 3 1/2 dozen.
