1/4 Cup mayonnaise
2 Teaspoon lemon juice
1 Teaspoon instant minced onion
1/2 Teaspoon salt
1/4 Teaspoon pepper
6 Hard boiled eggs
1/2 Cup finely chopped celery
4 Lettuce leaves
Blend together mayonnaise, lemon juice, onion, salt and pepper. Cut 4 Slices from center of one egg and reserve for garnish. Chop all remaining eggs. Stir chopped eggs & celery into mayonnaise mixture until moistened thoroughly. Spoon 1/2 cup for each serving into lettuce leaf. Garnish with reserved egg slices. Variations add to taste.
The following variations are good:
Sliced ripe olives green or black
Chopped green pepper
Cheddar or Swiss cheese
This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
