1/2 Cup red bell peppers
1/2 Cup green bell peppers
1/2 Cup chopped onion
4 Potatoes cooked, chopped
4 Hard boiled eggs, chopped
1-1 oz. Can Mexican whole kernel corn, drained
2 1/4 oz. Can sliced black olives, drained
1 Cup mayonnaise
2 Teaspoon taco seasoning
Mix together all ingredients and add dressing let stand 4 hours or more before serving.
Tip: Mom adds taco seasoning to taste.

This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
