1 Lb. Curly rotini pasta cooked al dente & drained
1 Cup chopped onion
1 Cup finely chopped green onion
1 Cup sliced black olives
1 Cup chopped tomatoes
1 Cup chopped celery
1 Cup fresh broccoli florets
1 Cup chopped watercress
6 to 8 oz. bottle Italian dressing or home made
1/2 to 1 Teaspoon Garlic powder
Salt and freshly ground pepper
1 to 2 hard boiled eggs, chopped
Anchovy fillets (optional)
1 Cup chopped green pepper
Combine first 9 ingredients in large bowl and toss lightly. Add dressing, seasoning and toss again. Cover and refrigerate at least 6 hours. Garnish with eggs and anchovies before serving, if desired.
This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
