1 (12 oz.) package fresh cranberries
3/4 Cup sugar
1 Medium jalapeno, cut into quarters
1 Green onion cut into quarters
1/4 Teaspoon cumin (scant)
1 Teaspoon Cilantro
Put all ingredients in processor or blender. Process until mixture is coarsely chopped. Store in refrigerator over night to allow flavors to blend.
Makes 3 cups.
This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
