Ingredients:
1/2 Cup red wine vinegar
1/3 Cup olive oil
4 1/2 Teaspoons dried basil
1 1/2 Teaspoons dried tarragon
1/4 Teaspoon dried oregano
6 Large tomatoes (peeled and thinly sliced)
2 Medium red onions (thinly sliced)
4 1/2 Teaspoons sugar
Salt and pepper to taste
Combine first 5 ingredients in small bowl and whisk until well blended. Layer half tomatoes in serving bowl and cover with 1/2 the onions. Sprinkle with 1/2 the sugar, salt and pepper. Drizzle with some of the marinade. Repeat with remaining ingredients. Cover and chill before serving.
Tip: Mom adds chopped garlic buds. Fresh basil is also very good... sometimes we adds goat cheese or fresh mozzarella slices with the tomatoes and onions.

This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
