Hot Chicken Salad



Hot Chicken Salad

Ingredients:

1 Cup chopped chicken, cooked

1 Can cream of celery soup

1 Cup diced celery

2 1/2 Teaspoon minced onion

1/2 Cup chopped nuts

1/2 Teaspoon salt

1/4 Teaspoon pepper

2/3 Cups mayonnaise

3 Hard boiled eggs, sliced

1 Can  peas ( I use fresh frozen)

1 Can chow mien noodles

 

Combine chicken, soup, celery, onions, nuts, salt pepper, mayonnaise, eggs and peas in a 9” inch baking dish. Top with noodles. Bake 400’F. for 15 minutes. 8 servings.

Tip:  Mom adds more onion and adds some green pepper. 

Good.

Chicken Parmesan

This is a perfect dish to serve for company.  Make plenty, everyone will want seconds! The chicken is dipped in a butter and garlic and lemon juice mixture then rolled in bread crumbs spiced with parmesan cheese and fresh parsley.  Vermouth is added and it is baked. This can be made ahead and popped in the oven about an hour before you are ready to eat!
