Ingredients:
1/3 Cup melted butter
1 Chicken, cut up
1 1/2 Cups freshly grated parmesan cheese
1 Tablespoon paprika
2 Teaspoon salt
1 Teaspoon pepper
In a 12x7 1/2” baking dish, melt butter and roll chicken in melted butter until coated. Combine remaining ingredients in a plastic bag and shake to mix up. Add pieces of chicken one at a time, shaking to coat with cheese mixture. Reserve any cheese mixture remaining, set aside. Arrange chicken skin side down in dish with thicker pieces to outside of dish. Cover with paper towel to absorb splatter. Cook on medium high for 9 to 11 minutes per lb. After half of cooking time, turn chicken pieces with skin side up. Sprinkle with reserved cheese mixture. Complete cooking on medium. Let stand 10 minutes. Brown for 5 to 6 minutes if you have a browning element. Serves 4.

This is a perfect dish to serve for company. Make plenty, everyone will want seconds! The chicken is dipped in a butter and garlic and lemon juice mixture then rolled in bread crumbs spiced with parmesan cheese and fresh parsley. Vermouth is added and it is baked. This can be made ahead and popped in the oven about an hour before you are ready to eat!
