Ingredients:
2 Young fryers
1/2 Cup Crisco
Salt and pepper to taste
4 Cloves minced garlic
1/2 Cup minced onion
1 Cup Romana cheese
1/2 Cup chopped parsley
4 Large potatoes (peeled and halved)
1 Cup cold water
3 Tablespoons Vermouth
After cutting chicken in serving pieces, rub with Crisco and place in well greased roasting pan. Sprinkle with salt, pepper, garlic, onion, cheese and parsley. Rub potatoes with Crisco and place around and in-between chicken pieces. Sprinkle potatoes with salt, pepper, garlic, onion, cheese and parsley. Place un-covered in oven. Bake at 375 degrees for 20 minutes. Add water and Vermouth then lower heat to 325 degrees and continue roasting for 30 minutes, basting occasionally until tender. Serves 6. (Round steak may be substituted for chicken for a different dish).

This is a perfect dish to serve for company. Make plenty, everyone will want seconds! The chicken is dipped in a butter and garlic and lemon juice mixture then rolled in bread crumbs spiced with parmesan cheese and fresh parsley. Vermouth is added and it is baked. This can be made ahead and popped in the oven about an hour before you are ready to eat!
