Topping Ingredients:
2 Cups flour
1 Cup sugar
1/2 Cup yellow cornmeal
1 Teaspoon cinnamon
1 Cup Butter, (2 Sticks) chilled, unsalted, cut into pieces
Topping:
Mix first 4 ingredients in med. bowl. Add butter and rub with fingertips until course crumbs form.
Filling Ingredients:
3 1/2 Lbs. green apples, peeled, cored and sliced
3/4 Cup sugar
2 Tablespoon fresh lemon juice
1 Tablespoon flour
2 Teaspoon grated lemon peel
Preheat oven to 375’F. Butter 13x9x2” glass baking dish. Mix apples, sugar, lemon juice, flour and lemon peel in large bowl. Transfer apple mixture to prepared dish sprinkle topping over apples. Bake until apples are tender and topping is golden brown-about 1 hour. Cool slightly. Spoon crisp into bowls. Top with rum raisin ice cream.
