Ingredients:
1 Cup sugar
1 Cup whipping cream
3 Egg yolks
1 Cup coconut
1/2 Chopped pecans
1 Teaspoon vanilla
1/4 Cup butter
Mix all ingredients in saucepan and boil until very thick stirring constantly. Spread between layers and top of cake.
Chocolate Icing
1 Stick butter
4 Tablespoon cocoa
6 Tablespoon milk
1 Box powdered sugar
1 Teaspoon vanilla
2/3 Cup chopped nuts
Combine first 3 ingredients in saucepan and bring to a boil. Remove from heat and add next three ingredients. Beat until smooth. Frost sides of cake. I sometimes add instant coffee to first 3 ingredients.

This is a moist cake with a fabulous cream cheese frosting. We use the jars of carrot baby food instead of grated carrots because they are so easy and the cake is just as good, if not better! This is my son's all time favorite cake, and the most requested cake for a birthdays around our house... When Taylor was a toddler, he called it "chocolate mustards cake". Don't ask me how it got that name!
