Ingredients:
1/2 Cup shortening
1 Cup brown sugar
2 Eggs
1/2 Cup molasses
1/2 Cup plum preserves
3 Cups flour
2 Teaspoons baking powder
1 Teaspoon salt
1 Cup milk
1 Pkg. mincemeat
Preheat oven to 350’F. Cream together shortening and sugar. Add beaten eggs. Add molasses and preserves. Add dry ingredients and mix well. Add milk and mincemeat. Stir in ingredients until completely mixed.
Bake for 1 hour. Cool cake and then frost with quick butterscotch frosting.
Quick Butterscotch Frosting
1 Cup brown sugar
5 Tablespoon butter
1/4 Teaspoon salt
1/4 Cup milk
1 1/2 Cups powdered sugar
1/2 Teaspoon vanilla flavoring
Combine brown sugar, butter and salt in saucepan and bring to a boil, stirring constantly. Add milk and cook slowly for about 3 minutes. Cool and add powdered sugar. Beat well and spread on cake.

This is a moist cake with a fabulous cream cheese frosting. We use the jars of carrot baby food instead of grated carrots because they are so easy and the cake is just as good, if not better! This is my son's all time favorite cake, and the most requested cake for a birthdays around our house... When Taylor was a toddler, he called it "chocolate mustards cake". Don't ask me how it got that name!
