Ingredients:
3/4 Cup butter
2 Cups sugar
4 Eggs
3 Cups flour
1/2 Teaspoon allspice
1/2 Teaspoon cinnamon
1/2 Teaspoon Nutmeg
1 Teaspoon soda
1 Cup buttermilk
2/3 Cup cherry preserves
2/3 Cup apricot preserves
2/3 Cup pineapple preserves
1 Cup chopped pecans
1 Teaspoon vanilla
Cream butter and sugar, add eggs. Sift flour and spices together. Dissolve soda in buttermilk. Add dry ingredients to creamed mixture alternating with buttermilk. Fold in preserves, pecan, and vanilla. Place in cake pan. Bake at 325’F. for 1 hour and 15 minute to 1 hour-30 minutes. Serve with whipped cream or topping. Makes 20 servings. Can also be baked in two loaf pans.
This is moist and good. Good for people who say they don’t like fruit cakes.

This is a moist cake with a fabulous cream cheese frosting. We use the jars of carrot baby food instead of grated carrots because they are so easy and the cake is just as good, if not better! This is my son's all time favorite cake, and the most requested cake for a birthdays around our house... When Taylor was a toddler, he called it "chocolate mustards cake". Don't ask me how it got that name!
