Ingredients:
3 Tablespoon chopped onion
2 Small cloves garlic, crushed
1/4 Cup olive oil, divided
3 Tablespoon soft bread crumbs
12 Small zucchini
1/4 Cup grated parmesan
Sauté onions and crushed garlic in 2 tablespoons of olive oil until tender. Remove from heat: stir in bread crumbs and set aside. Cut zucchini into 4 lengthwise slices leaving slices attached on the stem end. Fan the slices out, and place in 15x10x1 inch jelly roll pan. Brush zucchini fans lightly with remaining 2 tablespoon olive oil. Sprinkle each zucchini fan lightly with 1/2 teaspoon bread crumb mixture and 1 teaspoon parmesan cheese. Bake 350’ F. for 15 to 20 minutes or until crisp & tender. Yield 12 servings
