Ingredients:
1 Medium onion, sliced
1 Clove garlic, minced
1 Tablespoon olive oil
1 Med. zucchini, sliced
2 Med. yellow squash, sliced
2 Tomatoes, peeled & quartered
1/4 Teaspoon salt
1/8 Teaspoon pepper
1/8 Teaspoon dried whole oregano
1/8 Teaspoon whole thyme
1/4 Teaspoon hot sauce
Sauté onion and garlic in oil in a skillet until crisp & tender. Add zucchini and yellow squash: Cook vegetable mixture over medium high heat, stirring constantly, 2 minutes. Serve immediately Yield 6 servings
