1 1/4 Lb. Cauliflower (with 2” stem) broken into small pieces
1 Med. boiling potato, peeled & cut into 1/2 to 3/4 inch dice
1/2 Cup whipping cream
1/2 Cup freshly grated parmesan cheese
3 Tablespoon unsalted butter
1/8 Teaspoon freshly ground white pepper
Large pinch freshly grated nutmeg
Steam cauliflower with potatoes until soft, about 12 minutes. Transfer to processor. Add cream, cheese, butter pepper and nutmeg and mix until completely smooth. Season with salt to taste. (Can be prepared ahead to this point and re-heated.) Serve immediately .
Enjoy healthy broccoli served with a tangy slightly hot sauce drizzled over it. It is pretty on the plate, and tastes as good as it looks!
