Basic Light White Sauce
1 Tablespoon margarine or corn oil
2 Tablespoons finely chopped onion
1 Tablespoon corn starch
1/4 Teaspoon salt
Dash pepper
1 Cup milk
In a 1 quart saucepan melt margarine over low heat. Add onion, cook 1 minute or until tender. Stir in corn starch, salt and pepper until thoroughly blended. Remove from heat. Gradually stir in milk until smooth. Stirring constantly bring to boil over medium heat and boil 1 minute. Makes about 1 cup.
Follow recipe for basic light white sauce using butter, and add 1/8 teaspoon ground nutmeg. In 3 quart saucepan bring 1/3 cup water to boil. Add 1 lb. fresh spinach, trimmed. Cover and steam 1 to 2 minutes or until wilted. Drain and coarsely chop. Stir into sauce and cook until heated. Do not boil. Makes 4 to 6 servings.
